Gluten Free to a COELIAC means exactly what is says - FREE oF GLUTEN.
John.
There is ample evidence in Australia that products that have
reportedly had the gluten 'removed' (even though they cannot show you
absolutely that every single trace of gluten has gone) affects around
15% of diagnosed coeliacs.
The Australian societies term this group 'Super Sensitives' and have
gone on record as saying they belong to a minority that they do not
support.
And yet this 15% of *disgnoased* coeliacs have reactions ranging from
mild to severe at the smallest contact with gluten.
So - regardless of law - coeliacs themselves have to decide what,
exactly, gluten free means.
Does it mean free of gluten or free of visible reaction? The problem
is the European Union that legislates this sort of thing for
businesses NOT consumers.

By the way is this forum for US or Australian... ?
Welcome - well, in a way - best advice I can give - do not trust
ANYTHING until you have checked it out yourself and have satisfied
yuorself it is GF.
And look for 'hidden extras' (gluten the maker believes they don't
have to own up to)

Might want to check on the things you don't eat too. Shampoos,
toothpastes, and even some children's toys like Play-Doh may contain gluten.
