It was a first for me and it was my grandson's idea. "Let's bake a tomato cake, Grandma."

A tomato cake? I'd never heard of such a thing. Didn't even know
if I could find a recipe. A couple of my friends suggested a recipe, but the only tomato in it was a can of tomato soup, which didn't sound too appetizing, or adventurous. But then I finally discovered a recipe that included the real thing: fresh, ripe tomatoes.

Nuts, raisins, dates (it was the first time my grandson or I had used dates in a recipe) and two cups of fresh, ripe tomatoes, does indeed make a Tasty Tomato Cake.

Paul, doesn't even like tomatoes, but he does like broccoli...

"Let's bake a broccoli cake Grandma."

Is there such thing as a broccoli cake? If you have any recipes, help me out and send them my way.

Tasty Tomato Cake

1 cup dark brown sugar
1/2 cup butter
2 eggs

Sift these ingredients together:
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon salt

2 cups fresh ripe tomatoes, peeled, seeded, and chopped
1/2 cup nuts, chopped
1/2 cup dates, chopped
1/2 cup raisins

Cream sugar and butter. Add eggs. Add sifted dry ingredients, mix well. Stir in tomatoes, nuts, dates and raisins. Pour into greased 9x13 baking pan, or a Bundt pan. Bake at 350 degrees for 35 minutes or until cake tests done. Frost with cream cheese frosting when cooled.

Paul’s first time sifting anything, he was fascinated and loved turning the handle.

My grandson doesn’t even like tomatoes, but making a tomato cake was his idea.

You can bake the cake in a 9x13 pan or a Bundt pan. Paul chose the Bundt pan.

I suggested we put the baby tomatoes in the middle of the cake. "No, Grandma!" Plop, pop, plop, Paul’s decorating idea was perfect!
