easy diet for wieght lifter....

I know squat about nutrition. Can any of you recommend a good, easy
diet for me that would help me bulk up and lose some fat around my abs?
I'm taking meal replacements now, but I'd like to incorporate some
actual meals that are healthy. I don't have a lot of time so things
that are quick and easy like the meal replacements work good for me.
I'm thinking of the following, but I'd like some more input from those
of you that are more nutrition smart.

7:00 am: Banana, cerial w/milk (is Total cerial good for weight
training purposes?)
10:00 am: Meal Replacement

1:00 pm: LUNCH (see below)
4:00 pm: Meal Replacement
7:00 pm: DINNER (see below)
10:00 pm: Apple & Cottage Cheese (I read somewhere this is the best to
eat before bed)

For snacks while at work I'll keep a protein bar handy to munch on.
The nights I work out I also consume a "Muscle Milk" shake after my
workout, but maybe that's over kill?

I need the help with lunch an dinner. Lunch needs to be something I
can make quickly, or cook the night before and bring in to work with me
the next day, even leftovers from dinner the night before would work
good. Dinner can be something that takes a little longer to make.

I have no ideas for lunch, right now I am eating out chinese food
everyday.

For dinner right now I am rotating among the following:
Baked potatoe w/butter, cheese, sour cream. Side of mixed vegetables.
Sliced potatoes baked in peanut oil mixed with an onion soup mix.
New potatoes cooked in a little butter with side of mixed vegetables.
Pasta-Roni pasta Package with little or no butter.
Tomato Soup with crackers or toasted bread.

Anyway, I would appreciate any ideas, suggestions, etc. I don't really
know how healty my current diet is, but I'm sure it could use
improvement. I would love to hear what the rest of you do. Thanks.

Google around, there are lots of ideas out there. Try "tuna shake".

My current lunch is a can of tuna fish with salad and ranch dressing. Can
do it with a tbs olive oil and a tbs balsamic vinegar, too.

Another good lunch/dinner: 2 lbs turkey or chicken breast, sliced chinese-
style or ground; 1 lb packaged stir-fry veg or "broccoli straw"; 4 tbs
peanut butter; 2 tbs chili paste with garlic; salt/soy sauce to taste. Fry
the meat, add the veg, add everything else, stir around 5 min or so. Makes
4 lunches.
