It’s all well and good to want a little ruckus in your night, but what should you do if you need a little sustenance, too? In Las Vegas, there are any number of places to party and plenty of places to eat and one of the best to combine both is Diablo’s Cantina at the Monte Carlo.

The two-level Mexican-American spot has a rustic, comfortable décor and two bars putting a little fire in your day and night. And whether you’re stopping in for lunch or checking in for dinner with the intention to stay awhile, you’ll find all manner of favorites, such as the spiced strip steak nachos. As any nacho fan can attest, layering is key for the proper presentation and subsequent consumption of the dish. Diablo’s nachos have this technique down to a science. At no point will you pull a chip without some type of topping. Vegetarians can indulge in the four-cheese nachos, while chicken fans find roasted chicken on theirs. The baked queso fundido gives you more dipping options. It’s created with refried beans, chorizo, tomatillo sauce and guacamole on top.

You’ll want to accompany these starters (or finishers, if you attempt to eat them all by yourself) with a tasty cocktail such as the Chupacabra, with Casamingos Blanco tequila and jalapeños, the Sinful Vixen, which combines Stoli Razberi and lemon sour for a sort of hopped-up raspberry lemonade, and several varieties of frozen margaritas. Tasty. And tequila family flights allow you to taste blanco, reposado and anejo styles in a number of brands.

If you’re ready for another round, stuffed quesadillas are chock full of goodies. The stuffed ultimate quesadilla combines carne asada, pork carnitas, ranchero beans, guacamole and cheese in one very tall version of the classic. Fajitas come in chicken or steak with handmade flour tortillas.

Of course, a Mexican place wouldn’t be complete without tacos or burritos. Tacos come in threes, with sour cream, guacamole, pico de gallo, chipotle mayo, ranchero beans and rice. Vegetarians can indulge in a monster of their own, pumped full of rice, cilantro, onions, peppers, cheese and grilled corn, with black beans on the side. You can also get enchiladas, grilled salmon, wood-grilled chicken, taquitos and other specialties.

Not into the whole burrito scene? What about a jumbo burger labeled “the best thing since sliced bread,” prime meat with all the fixings, or a barbecue pulled pork sandwich with fries and a pickle?

And let us not forget dessert. Desssssssert. It’s not a huge menu of sweets, but a few incredibly good items like tres leches cake, ice bream and cookies , and flan, the Mexican custard, smooth and creamy, with a caramel sauce. But the churros here cannot be beat. These fragrant, deep-fried, cinnamon sugar wonders are also filled with apples and caramel. Chocolate and caramel dipping sauces are scarcely needed, but OMG, they’re delicious.
