Clams/蛤(ハマグリ、はまぐり)

Yesterday, my father got lots of clams from an acquaintance. I first removed sand from them by soaking them overnight in 3% salt water (2,000 ml of water plus 60 g of salt).
昨日、父が知人からハマグリをたくさんもらいました。まず、3%の塩水(水2,000 mlに塩を60 g)に一晩漬けて、砂抜きをしました。
This morning, I checked the clams to find none of them were open. Were they all dead? Anyway, I made soup (called ushio jiru), using about one third of the clams. Apart from water, I only added a small amount of salt. Most recipes call for kombu and sake. I added a small amount of soy sauce at the end.
今朝、ハマグリを見ると、どのハマグリも開いてませんでした。みんな死んでるでしょうか?ともかく、約1/3のハマグリを使って、汁(うしお汁と呼ばれる)を作りました。水以外は、塩を少量入れただけです。大半のレシピには昆布とお酒を入れるよう書かれています。最後にしょう油を少量入れました。  
As part of supper tonight, I made "hamaguri no saka (< sake) mushi" (clams cooked with sake).
今日の夕飯には、ハマグリの酒蒸しを作りました。 
Cooking sake contains a considerable amount of salt, so no additional salt is required.
料理酒には塩分がかなり入っているので、塩を足す必要はありません。 
Just put clams in a frying pan, add cooking sake, put on the lid, and cook until done.
ハマグリをフライパンに入れ、料理酒を入れ、ふたをして、火を通します。
Don't overcook!
火を通しすぎないように!

Last night, I put the last one-third of the clams in a colander over a bowl, and stored in the fridge.
昨晩、ボールにザルを乗せて、残りの1/3のハマグリを入れて、冷蔵庫に保存しました。

As part of lunch today, I made "hamaguri no saka (< sake) mushi" again,
今日の昼ごはんに、また、ハマグリの酒蒸しを作りましたが、
using cooking sake, margarine, and soy sauce this time.
今回は、料理酒、マーガリン、しょう油を使いました。
The combination of margarine (or butter) and soy sauce is heavenly.
マーガリン(またはバター)としょう油の組み合わせは、とても美味しいです。

Mitsuba in Miso Soup/三つ葉(ミツバ)を味噌汁に

In Japanese cuisine, mitsuba is often used as a garnish for clear soup. Such a garnish in clear soup is called suikuchi.
The other day, my father got lots of mitsuba from a neighbor.
和食では、三つ葉(みつば、ミツバ)は、すまし汁の添え物として使うことが多いです。そのような添え物は、吸い口と言います。
先日、父が近所の方から、三つ葉をいっぱいもらいました。
 


As requested by my father, I boiled half of the bunches and served as an ohitashi.
The next day, I decided to put the rest of the mitsuba in miso soup. I wanted to use them up while they were still fresh.
次の日、残りの三つ葉を味噌汁に入れることにしました。新鮮なうちに使い切りたかったので。

The other ingredients are dried enoki, wakame, and naganegi.
他の具は、干しえのき、若布(わかめ)、長ねぎです。

I found the mitsuba were much more flavorful in miso soup than as ohitashi.
三つ葉は、お浸しより味噌汁にしたほうがずっと美味しいと思いました。

Tonjiru (Pork Soup)/豚汁

As part of supper tonight, I made tonjiru. I'm going to describe how I make tonjiru.
First of all, the absolutely required ingredients for tonjiru are, for me, pork (obviously), daikon, carrot, and gobo (burdock root). Satoimo (taro) is almost required. The following ingredients are not required but preferred: Some kind of mushroom (such as oyster mushroom, enoki, or shiitake), konnyaku, tofu, naga negi, and grated ginger. The photo below shows almost all the ingredients for today's tonjiru.
今日の夕飯には、豚汁を作りました。私の豚汁の作り方を説明したいと思います。
まず、私にとって絶対に必要な具材は、豚肉(当然)、大根、人参、ごぼうです。里芋もほぼ必須。次のグザイは必須ではないですが、あったほうがいいです:或る種のきのこ(ヒラタケ、エノキ、シイタケなど)、こんにゃく、豆腐、長ネギ、おろし生姜。次の写真には、今日の豚汁のほぼすべての具材が写っています。
 
I start by putting some water in a large pot, and put it on the stove to boil. Then, I cut daikon and add it to the pot. Then, I cut carrot and add it to the pot. I have to do the cutting and the adding quickly before the pot comes to a boil. Then, I cut gobo and add it to the pot. When the pot comes to a boil, I turn the gas low, set the timer to 10 minutes, and start the timer. I add instant dashi. I peel and cut satoimo, and add it to the pot 5 minutes after the boil. Satoimo take about 5 minutes to cook. DON'T OVERCOOK SATOIMO. I add pork, mushroom, and naga negi 8 minutes after the boil. I turn up the gas as needed. I add grated ginger. I turn off the gas 10 minutes after the boil, and add miso. Finally, I add tofu. Done.
Ideally, the cooking time should be 10 minutes, but today, because of the large amount of satoimo, the actual cooking time was 18 minutes.
まず、大きな鍋に水を入れることから始めます。沸騰させるためコンロに置きます。それから大根を切って鍋に入れます。次に人参を切って鍋に入れます。鍋が沸騰する前に、素早く切って入れます。次にごぼうを切って入れます。鍋が沸騰したら、火を弱め、タイマーを10分にセットして、スタートさせます。出汁の素を入れます。里芋の皮を剥き、切り、沸騰してから5分後に鍋に入れます。里芋は火が通るのに5分程度かかります。里芋を煮過ぎないこと。沸騰してから8分後に豚肉、きのこ、長ネギを入れます。必要に応じて、火力を上げます。おろし生姜を入れます。沸騰してから10分後、火を止め、味噌を入れます。最後に豆腐を入れます。完成です。
理想的には、料理時間は10分ですが、今日は、里芋の量が多すぎて、実際の料理時間は18分でした。
My motto in cooking is to cook each ingredient for a sufficient amount of time. I don't want to overcook, and above all, I'm all for eco-friendly cooking!
料理に関する私のモットーは、それぞれの具材を十分な時間料理することです。火を通し過ぎたくないし、何より、エコ(環境に優しい)なクッキングには大賛成です!

Substantial Soup Turned Tonjiru (Pork Soup)/具沢山の汁を豚汁に

The main dish of tonight's supper was katsuo tataki on a mound of onion slices.
今日の夕飯のメインデッシュは、オニオンスライスの上に載せたカツオのたたきです。
Cheap (98 yen per 100 g) but tasty enough.
安い(100 g 98円)ですが、十分美味しいです。

It was rather cold today, which made me want to turn the leftover substantial miso soup into tonjiru. I added one pack of oyster mushroom, one block of momen dofu (< tofu), a large amount of gobo, some (about 300 g) thinly sliced pork, and grated ginger. I finally added some more instant dashi, turned off the heat, and added some more miso.
今日はちょっと寒かったので、残りの具沢山の味噌汁を豚汁にしたくなりました。ヒラタケ1パック、木綿豆腐1丁、ごぼうを沢山、薄切りの豚肉を少し(300 g程度)、おろし生姜を入れました。最後に出汁の素をちょっと足し、火を止めて、味噌を少し足しました。
Very, very good indeed! The combination of pork, burdock, ginger, and miso is heavenly.
とっても美味しかったです。豚肉、ごぼう、生姜、味噌の組み合わせは最高です。

Today, my wife's brother gave us these:
Kinpira gobo
今日、妻の実兄から頂いたものです。
きんぴらごぼう
I should say gobo-only kinpira. It was very good.
ごぼうだけのきんぴらと言うべきでしょうか。とても美味しかったです。

Nina (simmered nozawana pickle):

It was good, too.
これも美味しかったです。

Here in this area of Niigata prefecture, nina is not pronounced nina, but neena.
新潟県のこの地域では、「にな」ではなく、「にーな」と発音します。

Miso Soup with Shima Ebi Heads/シマエビの頭の味噌汁

It's nothing to write home about, but I feel inclined to talk a little bit about this: Today, I found shima ebi (Hokkai shrimp) heads sold for 50 yen per pack. I just had to grab two packs. (I sometimes see ama ebi (sweet shrimp) heads sold for the same price at this supermarket, but this is the first time that I have seen shima ebi heads sold there.)
大したことではないですが、ちょっと書きたいと思います。今日はシマエビの頭が1パック50円で売ってました。思わず2パック買ってしまいました(時々、このスーパーでは甘えびの頭を同じ値段で売っているのですが、シマエビの頭を売ってるのは初めて見ました)。
 
You may not know much about shima ebi. I can tell you they are delicious! 
シマエビのことはあまり知らないかも知れませんが、美味しいんです! 
Their long feelers prove that they are fresh ones, not frozen ones.
長いひげが冷凍でなく、新鮮である証拠です。

The flesh inside the heads is firmer than that of ama ebi.

Winter Melon (Wax Gourd)/冬瓜(とうがん)

Yesterday, my wife got one big winter melon from her father, together with cucumbers and eggplants.
昨日、妻が実父からキュウリやナスとともに、大きな冬瓜をもらいました。
(I asked her, "Is it a winter melon or a bottle gourd?")
My wife and I discussed what to do with this.
(妻に「冬瓜?それとも夕顔?」とききました。)
これをどうしようか妻と相談しました。 
 
We decided to make soup with some of it first.
まずは一部を使ってスープを作ることにしました。
 
Winter melon, cut in half crosswise:
横に半分に切った冬瓜: 
The peel is hard and thick.
皮は固くて厚いです。 
Cut into small pieces and put in a large pot:
小さく切り、大きな鍋に入れました: 
I added 1.5 liters of water to the pot, as well as 2 packets of instant Chinese broth and 2 tbsp of instant dashi, and simmered for 10 minutes.
鍋にお湯を1.5リットル入れ、また中華だしを2袋、出汁の素を大さじ2杯入れて、10分煮ました。
 
I tasted it, and I thought, "Something is missing." So, I added some mulukhiya, chicken tsukune (ground chicken + salt + egg + finely chopped naga negi), and naga negi.
味見して、「何か足りない」と思いました。そこでモロヘイヤを少し、鶏のつくね(鶏のひき肉+塩+卵+長ねぎのみじん切り)と長ねぎを足しました。
Despite the appearance, it tasted really good!
見た目は悪いですが、本当に美味しかったです!
 
I also made some pork hamburgers, nasu miso (eggplants pan-fried with oil, miso, sugar, and mirin),
豚肉のハンバーグ、ナスみそ(ナスを油、みそ、砂糖、みりんで炒めたもの)、 
and potato salad.
ポテトサラダも作りました。 
We also had these leftovers from last night's supper.
昨日の夕飯の残りも食べました。 
Gobo (burdock root) kimpira, simmered kabocha, and simmered kiriboshi daikon.
ごぼうのきんぴら、かぼちゃの煮物、切り干し大根の煮物。

Aji Sashimi and Ara Jiru/アジの刺身と、あら汁

Today, I went to the A-COOP store again, hoping to get some interesting mushrooms and other foodstuffs. I found numeri sugitake again. This time, the bag has a lable that clearly indicates the variety on it.
今日は、面白いきのこや他の食材があるかなあ、と思い、またA-COOPに行って来ました。また「ぬめりすぎたけ」がありました。今度は、はっきり品種が書かれたラベルが貼ってありました。
I also bought a bag of brown enoki and a pack of "miso pea" (= peanuts).
ブラウンえのき1袋と「みそピー」を1パック買いました。

I found sashimi-grade aji sold for 78 yen each! I bought four of them.
刺身用のアジが78円で売ってました!4尾買いました。
Before I went to the A-COOP store, I went to the 100-yen shop, where I bought these:
A-COOPに行く前に、100円ショップに行き、こんなのを買いました。
Inaka (lit. country) soba, a pair of chopsticks for my son, spicy takana (a type of green), and mulukhiya seeds.
田舎そば、息子用の箸一膳、ピリ辛高菜、モロヘイヤの種。

I should have selected aji more carefully! The second one from the top was rather small.
もっと注意してアジを選ぶべきでした!上から2番目のが小さめです。
I'm not very good at making sashimi, and managed to fillet the aji and made them into sashimi. Sorry for the poor presentation. The sashimi tasted very good.
私は刺身を作るのはあまり上手ではないです。どうにか3枚におろし、刺身にしました。見栄えが悪くて、すみません。刺身はとても美味しかったです。

Koya Dofu/高野豆腐

I used the koya dofu (freeze-dried tofu) that I had purchased at a 100-yen shop to make miso soup.  I was a little surprised that koya dofu contained more fat than I had imagined.
Koya dofu per 90 g
Energy:  489 kcal
Protein:  46.5 g
Fat:  33.4 g
100円ショップで買った高野豆腐を味噌汁を作るのに使いました。高野豆腐は思ったより脂質が多いので少し驚きました。

For comparison, kuruma fu (a type of wheat gluten) contains per 100 g:

I'm not a big fan of koya dofu because its spongy texture.  My father, who comes from Nagano (Shinshu), is a huge fan of it.
高野豆腐はスポンジのような食感で私はあまり好きではないです。長野(信州)出身の父は高野豆腐が大好きです。

Tonjiru Season!/豚汁の季節!

It's been rather cold here in Niigata prefecture, so I made tonjiru as part of supper last night.  Instead of peeling satoimo (taro) with a knife, I used a sheet to aluminum foil to do this job.
新潟県では寒い日が続いたので、昨日の夕飯には豚汁を作りました。
里芋の皮を剥くのに、包丁を使わないで、アルミホイルで剥きました。

Just crumple a sheet of foil into a ball and rub the satoimo.
ホイルをくしゃくしゃに丸めて、里芋をこするだけです。
To surprise my son, I bought a pack of honey mushrooms (naratake in Japanese) at the supermarket.
息子を驚かすため、スーパーでナラタケを買いました。
As I said several times here in my blog, naratake is called amandare here in the Uonuma region of Niigata, and is highly valued.  My son and I have been unlucky with naratake, having been unable to find it for years. 
このブログで何回も言っているように、新潟の魚沼地域では、ナラタケをアマンダレと呼び、珍重されています。息子と私は、ナラタケに関しては運が悪く、ここ数年、採れてません。

Tonight, we had the leftover tonjiru.
今晩は、残りの豚汁を飲みました。 
As you may know, freshly made tonjiru is good, AND tonjiru left overnight is even better!
知っていると思いますが、作りたての豚汁は美味しいですが、一晩置いた豚汁はもっと美味しいです!

Miso Soup/味噌汁

Here is the way I make miso soup:
I usually cook the vegetables the night before.
普通は、前日の夜に野菜を調理しておきます。


Cabbage and onion in this example.
In the morning, I turn on the gas, and put some instant dashi in the pot.  I sometimes add some abura age, which I shred and store in the freezer in advance.  If I decide to add wakame instead, I add it after I add miso and turn off the gas.
朝、火を点けて、鍋に出汁の素を入れます。前もって刻んで冷凍庫にしまっておいた油揚げを入れる時もあります。代わりにワカメを入れる場合は、味噌を入れて、火を止めてから入れます。


I can't say how much miso I add.  About this much.
味噌をどのくらい入れるか言えません。だいたいこれぐらいです。


I turn off the gas before the pot comes to a boil.
鍋が沸騰する前に火を止めます。


The bowl of rice (o-chawan or chawan) is placed on the left, and the bowl of miso soup (o-wan) is placed on the right.
ご飯の入ったお茶碗(茶碗)は左に、味噌汁の入ったお椀は右に置きます。


This is the standard way of placing them.
これが標準的な置き方です。
