Description of course of studies
Food chemistry is a special field of chemistry which interconnects both at degree and research level other specialized areas of the “Life Sciences†such as Nutrition, Food Technology, Microbiology and Toxicology. It is also concerned with legal aspects such as product labelling and food safety. In the interest of consumer protection it is primarily concerned with the testing of food, using chemical analysis and biochemical and molecular biological methods to examine the raw materials and composition of foodstuffs, as well as the breakdown and reaction of the ingredients during food preparation, processing and storage. Moreover, the presence of unwanted natural components as well as traces of residues and contamination in foodstuffs and drinking water are tested, using the most modern methods of analysis; the test findings are then analysed to check conformity with legislation concerning food and the environment. In addition to foodstuffs, cosmetics are tested and evaluated, as are many objects which people come in contact with in everyday life, such as crockery, packaging material, detergents, cleaning agents and toys. Food chemists work for food inspection authorities, for commercial laboratories, in laboratories concerned with quality assurance and research and development in the food, cosmetics and commodities industries, as well as on research and development projects at university institutes and state-operated research institutes; they also work for the food industry.
